This pork tenderloin is already cooked through. Tenderloin is the leanest cut on the pig and the easiest to overcook, which is exactly the risk sous-vide takes away. Open the pack, slice it cold or warm it.
How to warm it
Slice it before warming and give the slices only a moment in the pan. Tenderloin is lean, so it dries quickly - shorter is better.
To warm the piece whole, use foil and a moderate heat. It warms evenly that way and the edges do not dry out before the middle catches up.
What to serve it with
Pork takes sweet and sharp better than chicken does. Apple sauce, mustard, pickled onion or our fermented beetroot cut through a lean cut.
Cold sliced tenderloin is one of the few meats that is as good in a sandwich as it is on a plate.
Storing it
In the fridge, 4 days from production. The exact date is on the pack. Once opened, eat it the same day.
Common questions
- Is the pork tenderloin already cooked?
- Yes, fully cooked sous-vide. There is nothing to cook, only to warm if you want it hot.
- Will the tenderloin be dry?
- Tenderloin dries easily in a pan because it is lean. Sous-vide holds a steady temperature and the pack holds the juices in, so it only comes out dry if it is overheated.
- How much meat is in the pack?
- 500 g, 1 kg or 1.5 kg depending on the size. The exact weight and number of pieces sits next to each price.
- How long does it keep?
- 4 days from production, less the delivery day. The exact date is on the pack.
